There are so so many good places to eat, but these ones are pure Brighton:
Bill's the best breakfast/lunch option for miles and it's well worth the queue - an institution. (north laines)

Gars, good chinese in centre of brighton. Gab had her 30th birthday here, quite sometime ago now..
I could go on and on, all the normal stuff like wagamamas (north laines), jamies italian (centre of town) and all the usual other suspects.
Drinking
Too many places to name, but basically don't go to West Street. Brighton is full of independent local pubs, so try to avoid all the mainstream places you get everywhere.
Browns does really good cocktails, as Mr Bond points out it is a chain, but it has been in Brighton since the the late 60s and is unchanged. So it gets in the list.. Perfect excuse for the men to suggest popping in for a cocktail (beer..) after being dragged around the shops all day

Looking at the guest list I do not need to help many people to find a drink, so i will not get carried away..
Sightseeing
Brighton is a walker's paradise. The beach is brilliant either taking a right when facing the pier or left. Starting from the right/west side of the pier, you can walk all the way down to Fatboy Slim's house on the beachfront in Hove or just walk as far as Marocco's ice cream parlour. Yum.
Take a left or go east at the pier and the route will take you past the electric railway, nudist beach, then on to the marina. Past the marina there is a really nice cliff walk too (good old English white cliffs).

The Royal Pavilion is a crazy Regency-era oriental palace which was built for King George IV. You can visit the gardens or pay to go inside.
The Laines are at the heart Brighton's shopping scene and unique quirkiness. The North Laines are full of galleries and second hand boutiques while the South Laines are a narrow, twisty antique and jewellery area.
Brighton Pier is hideously tacky but is a must! The Dolpin Derby game is great fun and can be found down the end of the pier on the left.
